Quinoa Falafel Patties

Ingredients

  • 1 tbsp olive oil

  • 1.25 cups cooked quinoa

  • 3 tbsp chopped fresh parsley

  • 1/2 cup breadcrumbs

  • 1 tsp cumin

  • 1/2 tsp fine sea salt

  • 1 clove minced or crushed garlic

  • 1/2 small onion, finely minced

  • 1/4 cup crumbled feta

  • 2 eggs

Directions

  1. Preheat a cast iron or nonstick pan on medium heat and coat with at the 1 tablespoon of olive oil.

  2. In a large bowl combine the remaining ingredients and mix well.

  3. Shape the mixture into six patties and carefully place each in the preheated pan. Cook for about 5 minutes until golden brown, then flip and cook for another 5 minutes on the other side.

  4. Serve hot or at room temperature.
