Quinoa Falafel Patties

Ingredients
1 tbsp olive oil
1.25 cups cooked quinoa
3 tbsp chopped fresh parsley
1/2 cup breadcrumbs
1 tsp cumin
1/2 tsp fine sea salt
1 clove minced or crushed garlic
1/2 small onion, finely minced
1/4 cup crumbled feta
2 eggs
Directions
Preheat a cast iron or nonstick pan on medium heat and coat with at the 1 tablespoon of olive oil.
In a large bowl combine the remaining ingredients and mix well.
Shape the mixture into six patties and carefully place each in the preheated pan. Cook for about 5 minutes until golden brown, then flip and cook for another 5 minutes on the other side.
Serve hot or at room temperature.
