Campfire-Roasted Sweet Potato

Who Knew Sweet Potatoes Could Taste So Amazing.

I have always loved sweet potatoes, especially roasted. Even with as much as I love them, I had no idea they could taste even better cooked over the fire. It should have been obvious. Everything tastes better when cooked over an open flame, but this is extra true with sweet potatoes!

Ingredients

  • 2 half-pound sweet potatoes

  • 1 tbsp olive oil

  • Salt and pepper to taste (optional)

  • Butter for serving

Directions

  1. Wash the sweet potatoes and use a fork to pierce them in about 6 locations.

  2. Rub the potatoes with olive oil and season to tase with salt and pepper.

  3. Wrap the potatoes tightly in heavy duty aluminum foil, making sure surround them in at least two layer of foil.

  4. Place the potatoes directly in the fire pit, down with the coals. They should be placed near the edge of the active fire, where the coals are still hot, but not actively burning.

  5. Turn and flip every 15 to 20 minutes or so. The potatoes should be done in about 60 minutes. You’ll know that they are ready when they slightly squish when pressed with tongs.

  6. Remove from the fire pit and carefully cut the potatoes in half. Serve with butter, salt and pepper.
