Grilled Jalapeño Poppers with Bacon

Poppers and beer.jpg

Because Bacon. And Grilling.

All joking aside, these poppers are really easy to make and don’t require you to be a fry cook to make them. Plus they’re a real crowd pleaser!

Directions

  1. Preheat grill to medium/medium-high heat.

  2. Cut the 6 jalapeños in half and remove the seeds with a small spoon (keep the stems if you can, they make a good handle for this finger food).

  3. Finely chop the green onions (white and green parts).

  4. Place the 1/2 cup shredded cheddar, 4 oz cream cheese, and 2 chopped green onion in a small bowl and mix until well combined.

  5. Divide the cheese mixture between the 12 jalapeño halves and press it in so that it is relatively even across the pepper. The cheese mixture might heap in the middle a little bit. This is fine.

  6. Wrap each filled half with a piece of precooked bacon. It helps to press the beginning and end of the bacon into the cheese mixture a bit so that it sticks.

  7. Place the wrapped poppers on the grill and cook for about 10 minutes. The jalapeño should be cooked and the cheese mixture should be soft.

  8. Allow the poppers to cool slightly before cramming them in your face. It’s better for everyone this way.
